banana buckwheat pancakes – a recipe inspired by Donna Hay
input/output. ‘you are what you eat’ and if you want to shine, nothing beats maple syrup pancakes. it’s true! when we have a tough week ahead, here is how we prepare:
120 gr buckwheat flour
100 gr whole spelt flour
3 tbsp. aluminum-free baking powder
1 tsp. ground cinnamon
1 pinch of salt
200 gr mashed banana (about 3 ripe bananas)
180 ml almond milk
butter for frying
serve with maple sirup and banana slices
try to get as many of these from an organic source.
mix the dry ingredients in a bowl. add mashed banana, egg and almond milk. blend well.
heat a skillet and add a little butter. add three large spoonfuls of batter. let the pancakes cook until the upperside looks opaque – this should take about 3 minutes. then flip the pancakes.
repeat with remaining batter. enjoy warm, drizzled with maple sirup and banana slices.
